Frederick Jay "Rick" Rubin (s. 10. maaliskuuta 1963 Long Island, New York) on yhdysvaltalainen amerikanjuutalainen[1] musiikkituottaja, joka perusti levy-yhtiöt Def Jam Recordings ja Def American. Nykyään hän on Columbia Recordsin johtaja.
